Spot the Difference Cake

I tested and approved my very own Keto Cake recipe today. A microwave cake in a mug no less. And it turned out to be delicious, moist, light and best of all . . . perfect blood sugars for hours afterwards.

This is named after Spotted Dick - which you should really look up if you're unsure as to what this is. Under the genre of puddings!

Complete with frosting and sprinkles. Oh yes, I really went to town. 



Throw all this into your best shaped microwaveable mug:

  • 1 large egg
  • 2 tbsp coconut flour
  • Da Vinci Sugar free Syrup 1.5 pumps (I used caramel) - probably any sweetener will work
  • 1/2 tsp vanilla essence 
  • 1/4 tsp baking powder
  • 100% dark chocolate - I used 1.5 buttons of Hotel Chocolat
  • 30g Cream Cheese


Stir it all up really well with a fork, until the mixture is completely smooth.

Depending on size of your egg and type of sweetener you use (liquid v granules etc.) you may need to add tiny bit more or less coconut flour. Mix should be wet but not super wet! Holding together / fairly thick is good.
Microwave on full power for between 1 minute 30 and 2 mins. Mine took full 2 mins.


Once slightly cooled (about 5 minutes) frost with a teaspoon of cream cheese mixed with a dash of sweetener, to taste. I used Da Vinci Caramel Sugar Free Syrup again.

Use your leftover half 100 percent dark chocolate button to grate prettiness all over your frosting!
