Chicken, Bacon, Mushroom Skewers

Summer seems to be on it's way out, with darker evenings drawing in and it's been damn chilly! Cardigans at the ready.

We've been making the most of what could be the final days (still secretly hoping for an Indian Summer) with these Chicken Skewers. They're super simple to make and they're plenty for a lunch or evening meal paired with a side salad.

Perfect for Keto.


  • Chicken Thighs Skinless - pack of 4
  • 4 strips of smoked, streaky Bacon (or 8 if you're a bacon addict like me!)
  • 1 pack White Mushrooms - not button, go for medium sized ones, or they break on the skewers
  • Ranch dressing of your choice
  • Pinch of dried Oregano and Basil
  • Salt & Pepper to taste

    Here's the Ranch Dressing we used as it's pretty low carb + delicious.


Soak your skewers in cold water for 1 hour before using, if wooden. Metal ones - no need to soak!

At the same time, chop your chicken thighs into approximately 2 inch by 2 inch pieces and marinade in a good glug of Ranch dressing. I used about 4 tablespoons. Give it a massage to help it soak in and pop it back in the fridge for 1 hour.

Now you're ready to assemble.

I aim to use about 1 thigh per skewer, so split your chicken by eye into 4 servings.

Start with the bacon and thread it onto your skewer but don't push it on far or you'll not be able to loop it back around.

Next add chicken, then loop the bacon back on, then mushroom, then loop the bacon again, make your own pattern and don't worry if there's chicken followed by chicken.

If you really LOVE bacon, then why not use extra and go for 2 strips per Skewer.

Important Tip: Loosen the skewers off, by separating items a little, so the bacon has room to crisp up properly.

Sprinkle your skewers with your dried herbs and salt & pepper.


Pop into a Fan Oven at 180 degrees Celsius. Ours took around 25 minutes and then we checked the internal temperature of the chicken to make sure it was over 165 degrees, with juices running clear. Also, make sure your bacon is nice and crispy or you can pop under the grill for a few minutes extra.


Delicious! Serve with a simple side salad.
